Spicy Garlic Noodles (Leftover Spaghetti)

TIME:  20 mins or Less
INGREDIENTS:  Leftover Spaghetti Noodles, Garlic, EVOO, Red Pepper Flakes, Parmesan Cheese, Seasoning, Lemon Juice
Optional: Sliced Green Onions, Soy Sauce
 
 
 
 Medium Heat.  Add EVOO and garlic.
(I started with approx. 4 tbsp of oil because my family doesn't like it oily.
You can always add more later.)

Add red pepper flakes; a little goes a long way. 
(Use the red pepper packets from the pizza man)
 
 Add juice from half a lemon.
 
 Add spaghetti noodles, seasoning & Parmesan cheese.
(Optional toss with green onions)

Serve with Soy Sauce.  Enjoy!

Chicken Stuffed with Spinach & Cheese

Time: 1hr or Less           350 degree oven
INGREDIENTS:  Thin Chicken Breast, EVOO, Seasoning, Spinach, Garlic, Any Cheese, Toothpicks
 
Slice cleaned chicken breast in half.

Place chicken under clear wrap and beat until very thin.
Use a meat mallet or heavy pan.

 Here is approx 1/4 inch thick.
Spread chicken breasts with olive oil & seasoning.
(I used salt, pepper, garlic powder, onion powder, cayenne & parsley)
 
 Use fresh or frozen spinach leaves.
If frozen, thaw & drain all liquid.
 
 Heat tbsp EVOO on medium heat.  Add diced garlic, spinach & seasoning.
Saute until garlic is fragrant.
 
 Remove from heat.  Add cheese & mix.
(Ricotta, spinach, & garlic mixture photo above)
 
 Spread approx. 2 tbsp mixture over chicken.

 Roll chicken like pinwheel and secure with toothpicks.
 
 Place in skillet that has been preheated on medium heat.
Brown on both sides then place skillet in oven for 10 to 15 mins or until chicken is fully cooked.
 
Remove toothpicks and slice before serving.
Optional Sauce:  Remove finish stuffed chicken from pan.  Add 3/4 cup water and additional seasoning (or chicken bouillon cube) to pan drippings.  Bring to a boil & stir to loosen all seasoning stuck to skillet.  Reduce heat to simmer for 5 mins.  Serve over chicken.

Quesadilla (Leftover Chicken)

TIME:  30 Mins or Less
INGREDIENTS:  Tortillas, Precooked Chicken, PAM or EVOO, Shredded Cheese
Optional: Lettuce, Jalapenos, Sour Cream
 
Buy or Make Tortillas according to package directions.
(Skip next two photos if buying tortillas)
 
 Separate dough into equal balls.

Roll out on floured surface.
 
Leftover chicken with mushrooms, onions & garlic.  Thawed.

 Chop Chicken & Warm.

 Prepare Toppings.  I used shredded cheddar, mozzarella, spinach & jalapenos.
 
 Spray Pam on both sides of tortilla and place in skillet or grill pan.  Medium Heat.
 
 Add toppings.  Put Cheese on both sides so the quesadilla sticks closed.
 

Enjoy.  Serve with Chips & Queso or Mexican Rice.

BBQ Sausage

Sausage is a must buy whenever I go grocery shopping.  My husband likes Beef Sausage, I like Polish Kielbasa Sausage, and the girls usually eat Turkey Sausage.  I recently purchased Andouille Sausage for some gumbo I was practicing making.  I used all 4 sausages but you can use just one.  (I like to use a little of multiple sausages so I can use some of the rest in another meal later.)
Any regular sausage is good for this meal.

Here are some other meals you can use sausage in:
  • Pizza Topping
  • Any Pasta
  • Sandwiches
  • Jambalaya
  • Fried Rice
  • Breakfast Meat
  • Inside an Egg Omelet
  • 16 Bean Soup
  • Red Beans
  • Gumbo
  • On the Grill or Grill Pan

I never had anything ready to eat in my fridge.  My husband doesn't like frozen prepackaged meals and he would constantly just stare in the fridge not finding anything to eat.  So now I cook a few different things so a meal is always available.  BBQ Sausage is good to have...just in case.

TIME:  20 MINS
 

INGREDIENTS:  SAUSAGE, ONIONS, BELL PEPPERS, 3/4 CUP BEER OR BEEF STOCK OR WATER W/ BEEF BOUILLON CUBE, BBQ SAUCE, SKILLET

 Thin Slices of Sausage. (3 inch piece cut into 4 slices length wise)
Cut Onions & Bell peppers length wise also (no photo)
 
 
Cook Sausage in Skillet. (Brown both sides)
 

 Remove Sausage and Saute Onions & Bell peppers in Skillet w/ Salt & Pepper.

 Add Cooked Sausage & Approx. 3/4 cup of Any Beer or Stock or Water & Bouillon.
(This will help remove the flavor from the bottom of the pan)
 
 
Add BBQ Sauce.
(Approx. 3/4 cup)

Reduce Heat & Cook For 5 Mins. 
ENJOY!
